…its a mouthful. And you won’t be able to stop going for more.

Have you tried the Hilton’s Double Tree Chocolate Chip Cookies? Years and years of traveling and trying cookies from all over the world and those warm, chocolate chip cookies that you get at Check-in are still my absolute favorite. Whenever we need to book a hotel, my first choice is always the Double Tree, just for their cookies! And plush white bedding but that’s another post for another time.

After getting the recipe (which Hilton finally made public… thank you!!), I did some experimenting and swapping to make it a little healthier, just so I can enjoy it more ;). Almond Flour was the perfect alternative as its more nutrient dense, packed with Vitamin E, magnesium, protein and fiber and has a lower glycemic index.


Chewy Chocolate Chip Oat Nut Cookies

Yield: 12 Cookies

Prep Time: 10 minutes
Cook Time: 20 minutes

Ingredients:

1 1/4 cup Super-Fine GF Almond Flour (Bob’s Red Mill)
1/4 cup Old Fashioned Rolled Oats GF (Bob’s Red Mill)
1/2 teaspoon Baking Soda
1/3 cup White Granulated Sugar
1/3 cup Brown Sugar
1/2 teaspoon Salt
1 cup (1 stick) Unsalted Butter, softened
1 teaspoon Vanilla Extract
1 egg
1/2 teaspoon Lemon juice
1/4 teaspoon of Cinnamon
1 1/3 cup Semi-sweet Chocolate Chips
3/4 cup Chopped Walnuts

Directions:

  1. Preheat oven to 300*F.

  2. Using a mixer or electric hand beaters, cream together softened butter and sugars until light and fluffy. Scrape down the sides of the bowl as needed to make sure ingredients are mixed well.

  3. Beat in the eggs, vanilla, lemon juice for a couple of minutes.

  4. At a lower speed, add the dry ingredients: flour, oats, baking soda, cinnamon and salt.

  5. Fold in the chocolate chips and chopped walnuts.

  6. Using an ice cream scoop or 1/4 measuring cup, place a scoop of the mixture 2 inches apart on a cookie sheet lined with parchment paper.

  7. Bake at 300*F for 20 minutes.

Notes:

  • Cookies are baked at a lower temperature for crispier edges with a softer center.

  • The chopped walnuts I purchase at the store tend to still be a little too chunky for this recipe so I throw them in a ziplock bag and roll a rolling pin over them to break them up a little smaller.

  • You won’t be able to taste the lemon. It just adds a nice balance of acidity to all the sweetness.
